Over the weekend, I made this amazingly delicious medley seafood. I posted it on my Facebook page and got lots of likes on it. I promised I’d share the recipe, so here it is folks! Happy cooking!

Simple + Fit Recipe
Seafood Medley | Ingredients

  • 2 lbs. shrimp (deveined, shelled)
  • 1 lbs. crab legs
  • 2 lbs. mussels
  • 1 large red bell pepper
  • 1 med-large yellow onion
  • 2 1/2 cups fresh organic baby spinach
  • 1 lbs. sliced white mushroom
  • 1 14.05 oz can of Hunt’s diced tomatoes (basil, garlic, oregano; no salt added)
  • 2-4 cloves of garlic
  • 3 limes, squeezed
  • 2 cups of white wine (Kendall Jackson Chardonnay)
  • 3 tablespoons of Irish Butter (unsalted)
  • 1 teaspoon crushed red pepper flakes
  • Olive oil
  • Salt + pepper

Directions

Prep—

  1. rinse shrimp, crab legs and mussels in cold water
  2. add shrimp, crab legs and mussels in deep bowl, squeeze two limes over seafood, sprinkle salt + pepper; toss until fully saturated w/lime, salt + pepper
  3. dice onions, bell pepper, and garlic

Cook—
In deep pot, sauté diced dice onions, bell pepper, mushrooms and garlic in olive oil until lightly brown. Add butter, shrimp, crab legs and mussels, diced tomatoes, squeeze in more lime juice, add white wine, crushed red pepper flakes, salt + pepper. Stir everything together until all ingredients is fully saturated, add salt + pepper to taste as needed. Cover pot and bring mixture to boil until shrimp turns pink, mussels open up (10-15 mins). Add baby leaf spinach, stir in until spinach turns dark green. Remove cover, reduce heat + cook for about 5 mins. Serve w/jasmine rice or whole wheat sunflower seed bread from your local bakery.

You can choose fresh basil, tomatoes and oregano for this recipe. However, I choosed Hunt’s Diced Tomatoes with Basil, Garlic & Oregano No Salt Added. You should taste a host of robust herb blend flavors in this dish. And my favorite part is that it’s super healthy for you because you’re getting all the great nutrients from the seafood, spinach, bell pepper without the extra sodium. It’s super easy, it took me all of 35 minutes from prep to cook.

Sweetest #Birthday!

My birthday was one of the best birthdays I have had ever! Edward and Arianna greeted me with balloons before I even got out of the car.

This here is THE best birthday dinner: grilled salmon, salmon + cilantro salad, fresh crab cake, and grilled veggies. He made this all by himself, I took pics of him cooking to capture the moment!

Homemade chocolate cake topped w/cookie candles. I made a wish and ate the candles off the cookies. :)… (no real candles because Arianna gets into everything, so must keep fire away from baby). I made a wish, I’ll let you know when it comes true, so stay tuned…

I took a short stroll with my work BFF, Jacq (her name is Jacqueline but I call her Jacq–love her name) to Union Station for lunch. To be honest I’d never heard of Pret A Manger until today. When it comes to food, I’m one of those “I stick w/what I know” kinda gal. (Hey, studies have shown people maintain a healthy weight by eating the same thing over and over).

PRET is known for its handmade, natural foods–salads, sandwiches. They avoid obscure chemicals, additives and preservatives. Check out their summer menu. They’re in Hong Kong, France, UK and USA. I went to their website and they have these cool facts about food and ‘feel good facts‘ that I love, like this one…

Four Veggies Perfect for Fourth of July Grilling

Hello dream lovers! I hope you’re having a great Tuesday. I am working from home today, as Arianna is home sick; she’s teething.

Traditionally the Fourth of July holiday falls on a weekend making for long weekends, but not this year. This year, the fourth is right smack in the middle of week, which means back to work on Thursday. But I don’t want to think about that so let’s stimulate our mental pallets with some amazing grilling veggies perfect for any independence day party.

Here are some veggies I’m dying to throw on the grill:

grilled asparagus

grilled asparagus, they’re so delicious and great source of antioxidants.

grilled corn

grilled corn, probably my favorite. corn is a great source of vitamins, including folic acid and niacin.

grilled eggplant

I’ve read that eggplant contains dietary fibers that aids in reducing colon cancer, is a great source of vitamins A, B, C and potassium to name a few.

grilled portabella mushroom

I’ve had grilled mushroom at restaurants and kind of always wanted to try grilling some at home because I love sauteed mushrooms. Portabella mushrooms has lots of potassium which helps lower elevated blood pressure and reduces the risk of stroke.

bell peppers

Red bell peppers are packed with antioxidants and are a good source of vitamin C, thiamine, vitamin B6, and folic acid.
